Dips and Extras

Basic Hummus

 1 x 400g can of chickpeas or
dried chickpeas soaked overnight and boiled for about an hour until soft.
2 tablesp olive or rapeseed oil
Juice from 1/2 a lemon
Pinch of sea salt
2 cloves of garlic (more or less depending on your taste)

Put all the ingredients in a food processor and blitz until well mixed.
Use vegetable sticks to dip e.g carrot, celery, cucumber.
Use thinly until you build up a taste for these vegetables.

Add in some cayenne pepper, chilli flakes or fresh turmeric according to your taste and make this hummus your own creation !!


Rustic Chips

Organic potatoes - green earth organics in Galway harvest lovely vegetables

Rapeseed oil
Sea Salt - black pepper and fresh rosemary

Scrub the potatoes and leave on the skins
Roll in a little rapeseed oil (gives a lovely yellowy colour)
Sprinkle with salt, pepper and chopped rosemary to taste.
Cook in the oven at gas 4 - 160C for about half an hour then raise the temperature to gas 6 - 180C for about 10 mins to brown.
